If there are any of you out there who haven't tried "Chipotle"-anything because you don't have a clue what it is, please, it is one of the best of man's inventions. Chipotle (I suspect it is pronounced shee-pote) is the Mexican technique of roasting/grilling vegetables and chilies before they make a salsa out of it, creating a distinct and OH-SO-GOOD flavor that is like barbecue and hickory's sexy younger sister. You can expect it to be spicy. Oh yes. Spicy. It makes me sweat. But it doesn't come on too strong, nor too quickly. Seduce me, Chipotle.
